Quand on me demande de parler de mon parcours professionnel, je commence par cette citation du c\u00e9l\u00e8bre \u00e9crivain am\u00e9ricain Ernest Hemingway \u00ab Lorsque je r\u00eave du Paradis, je me trouve toujours transplant\u00e9 au RITZ \u00e0 Paris \u00bb<\/p>\n

C\u2019est ce l\u00e9gendaire Palace qui m\u2019a donn\u00e9 une formation, une promotion, une empreinte permanente de la conception de l\u2019h\u00f4tellerie de luxe et de la gastronomie pendant 16 ans gr\u00e2ce \u00e0 deux hommes, l\u2019un en cuisine, Auguste Escoffier, l\u2019autre en salle, C\u00e9sar Ritz, deux pionniers, visionnaires qui ont r\u00e9volutionn\u00e9 notre passionnante profession avec pour devise \u2013 Luxe, Perfection, Discr\u00e9tion, Bienveillance \u2013 Devise que je me suis ing\u00e9ni\u00e9 \u00e0 pratiquer pendant un demi-si\u00e8cle dans 4 \u00e9tablissements, Le Ritz, Le Roi Dagobert, Le Royal, Le Cercle Munster.<\/p>\n
